Pupusas revueltas are cakes filled with vegetables, cheese, or meat.

Pupusas revueltas is a popular cheese-filled, thick tortilla dish. These griddled corn cakes are a national delicacy of El Salvador. They are frequently served with curtido (a cabbage salad with vinegar dressing) and salsa roja (made with fire-roasted tomatoes).

The most popular flavor combination for pupusas revueltas is cheese, refried beans with cheese, or pork. Another option is to prepare them using loroco, a flower bud from Central America.

What are pupusas?

Pupusas revueltas are cakes made with masa carina, which is nixtamalized corn (corn treated with an alkaline solution, such as lime). This procedure enhances corn's flavor, fragrance, and nutritional value.

How to make pupusas revueltas

To prepare pupusas revueltas

  • Prepare the meat. Slow-cooked meats, such as pork, beef, or chicken, make the best-braised meats. Meat can be substituted with cheese.
  • Make your masa according to the directions on the package or the following:
    • 2 cups of masa
    • ½ a teaspoon of salt
    • 1½ cups of warm or hot water for every batch of dough. Hot water thoroughly hydrates the masa.
  • The dough should have a silky texture and easily come together. If your pupusas are cracking, add some water.
  • Make seven to eight golf ball-sized portions from the dough.

To fill and shape pupusas revueltas

  • Place the cheese, meat, and refried beans in a bowl. Combining everything into one filling could be simpler.
  • Use a tortilla press to press the dough balls into discs that are about four inches in diameter. Or, use parchment paper or plastic wrap. You can prepare yours by covering a flat plate in plastic wrap, setting the ball on the plate, then pressing it with another plastic-wrapped plate. Having plastic wrap on both sides makes it easier for the dough to release (do not prepare the discs too much in advance because your dough can get dry).
  • The pupusa should be filled as densely as possible without overstuffing or allowing too much filling to get out from the edges.
  • Start by adding a small amount of cheese, beans, and pork to the center of the disc. Leave a thin border that is clean on all sides.
  • Wrap the filling with the pressed tortilla; it should resemble a smooth ball. It could be easier to wrap the dough around the filling if you use plastic wrap and cup it in your palm.
  • Flatten the stuffed ball using a rolling pin by placing it between two pieces of parchment paper or plastic wrap. The finished product should appear like a disc with little fillings visible.

To cook pupusas revueltas

  • Warm up a pan over medium-high heat.
  • Add one or two teaspoons of oil.
  • Cook the prepared filled discs for two to three minutes on each side or until it is crispy and golden.
  • Serve it with cabbage salad with vinegar dressing and fire-roasted tomato salsa.
